Overview
Jasmine tea (茉莉花茶 or 香片) is a tea scented with jasmine blossoms, typically using green tea as a base, though white and black teas are also used. It is known for its subtly sweet and highly fragrant flavor, making it the most famous scented tea in China.

History
Introduced to China from South Asia during the Han dynasty, jasmine was used to scent tea by the fifth century. Jasmine tea gained widespread popularity during the Qing dynasty and is still commonly enjoyed in tea shops worldwide.

Preparation
Tea leaves are harvested in early spring and stored until late summer when jasmine flowers bloom. Flowers are picked early in the day and kept cool until night, when they release their fragrance. The tea is scented by placing it in layers with jasmine flowers or blending them together, with the process repeated up to seven times for top grades like Yin Hao. The tea is then dried to prevent spoilage.

Cultural Uses
In southern China, serving jasmine tea is a welcoming gesture. It is the local beverage of Fuzhou, where jasmine flowers are the municipal flower. Jasmine holds symbolic meanings in Chinese culture, representing heavenly fragrance and historical significance in Buddhist art. In Fuzhou, tea was historically considered an antidote to many poisons, reflecting its cultural importance.
